National Potato Day is the time to give respect to the much-loved spud. Annually recognized on August 19th, there are no shortage of ways in which you can enjoy this versatile vegetable. Whether baked, boiled, mashed, totted, hash browned, chipped or French fried, recipes abound for breakfast, lunch, dinner and snacks.

In the United States, the tubers of the potato plant are one of the most consumed vegetable. In fact, most Americans eat nearly 50 pounds of potatoes every year, according to the United States Department of Agriculture. That’s a lot of fries!

Did you know potatoes contain important nutrients, making them a beneficial part of a healthy diet? They are an excellent source of potassium, vitamin C and fiber – especially nutritious if you leave the skin on.
