I’ve made it a tradition to serve up good luck black-eyed peas on New Year’s Eve, along with a hefty helping of sautéed green kale. Beans, like several other round foods, symbolize coins. As the south rebuilt after the war, black-eyed peas became a symbol of good luck and prosperity.

Ingredients
- 2 11 oz. packages fresh or
- frozen black-eyed peas
- 7 plum tomatoes, peeled
- & chopped
- 6 cloves garlic, chopped
- 1 onion, chopped
- 1 tbsp. sugar
- 2 tbsp. dried basil
- ½ tsp. salt
- ½ tsp. ground black pepper
- ½ cup water
- 1/3 cup olive oil
Instructions
- In medium saucepan, combine all ingredients. Cover and simmer 30 minutes or until beans are tender, stirring occasionally. Add more water, if necessary, to prevent burning. Happy New Year, Enjoy!
