Steelhead Trout with Summer Salsa
Notes
Serve alongside steamed cauliflower or green salad.
Ingredients
- 1 tbsp. olive oil
- ½ lemon, juiced
- 1/8 tsp. salt
- ¼ tsp. ground black pepper
- 1 shallot, chopped
- 1 16 oz. clamshell organic strawberries, stems removed & chopped
- ½ cup fresh basil, chopped
- 1 tbsp. garlic herb butter
- 3 fresh steelhead red trout fillets, deboned
- 1 tbsp. Old Bay seasoning
Instructions
- In medium bowl, combine olive oil, lemon juice, salt and pepper. Add shallot, strawberries and basil; toss to combine. Set aside.
- In large skillet, melt garlic butter. Sprinkle Old Bay seasoning over trout. Place face down in hot skillet, sear 3 minutes; turn. Continue cooking until trout is flaky, about 4 minutes. Spoon summer salsa over each trout serving. Enjoy!
