Zucchini Spaghetti
Notes
I suggest using pasta infused with vegetables for this recipe because it works deliciously, plus it is a great way to sneak in an extra serving of veggies into your family’s dinner. You can also use traditional pasta, if preferred.
Ingredients
- ¼ cup olive oil
- 6 zucchini squash, peeled &
- sliced
- ¼ tsp. ground black pepper
- ½ tsp. salt
- ½ tsp. onion powder
- ¼ tsp. garlic powder
- 1 12 oz. package veggie-
- infused spaghetti
- Grated Romano cheese
Instructions
- In large skillet, heat oil. Add zucchini to hot oil; sprinkle next 4 ingredients over zucchini. Using a spatula, mix zucchini often to cook evenly. Cook until zucchini reaches desired tenderness.
- Meanwhile, boil spaghetti according to package directions. Drain. Divide spaghetti amongst serving plates. Distribute cooked zucchini with oil evenly over spaghetti. Top with Romano cheese. Enjoy!
