…Or what I like to call “Whatever You Have in Your Fridge Meal.” Yes, this recipe for Sausage, Egg & Pepper Scramble was conceived from looking at the miscellaneous items I wanted to use up in my refrigerator before they reached their expiration date. The scramble that was born was so good, I turned it into an official recipe…and here it is!
I know it’s easy to keep adding new groceries to your fridge and freezer. There’s a certain excitement to bring in new products and merchandise. Unfortunately, the thrill is quickly gone and before you know it, your freezer is jam packed with use-by dates from 2019. Before your food becomes unidentifiable, make it a weekly practice of rearranging and organizing your refrigerator/freezer. Use up any old items before buying new ones.
Adopt the FIFO policy – first in, first out. Get creative, have fun and see what new recipes you can cook up. Make your kitchen a zero-waste zone, and in doing so, save money and resources in the process.

Sausage, Egg & Green Pepper Scramble
Ingredients
- Olive oil cooking spray
- 10 sausage links, fresh or frozen
- 1 small onion, diced
- 3 cloves garlic, chopped
- 1 green bell pepper, diced
- 6 eggs
- 1/8 tsp. ground black pepper
- Pinch of salt
- 1 cup shredded cheese, preferably cheddar
Instructions
- In 12-inch nonstick skillet, coat lightly with olive oil cooking spray. Place sausage in skillet. Cook over medium heat until browned and cooked through. Remove sausage from skillet. Cut into bite-sized pieces; set aside.
- In same skillet, heat a bit more cooking spray over medium heat. Add onion, garlic and green pepper. Sauté until veggies are tender, stirring occasionally.
- Meanwhile, in medium bowl, beat eggs, black pepper and salt. Once vegetable mixture in soft, pour beaten eggs evenly into skillet. Allow eggs to begin to set before stirring. Once eggs start to set, stir to scramble all the ingredients together. Sprinkle cheese over top. Continue cooking until eggs are cooked and cheese is melted. Transfer to serving plates. Serve with salsa and sour cream, if desired. Enjoy!
